Okay, it’s really not ratatouille. Because rataouille is stew with vegetables choopped up and integrated into the stewy, tomatoey broth. No, this is the fancy one called Confit Biyaldi, which Remy makes to the glee of The Critic in the movie.
The French invented it. But Thomas Keller gifted it to the US with his French Laundry cookbook.
I don’t do a lot of video but this one was fun to do and not entirely stressful. My goal for these things is to be “not embarrassing” and I got there. I think. LOL.
Today, I’m in the kitchen making posole for my Forum Lecture tonight at the University of Las Vegas. This video supports that event. I’ll be talking about food and poverty. Wish me luck!
